WHY WE LOVE THIS WINE
This is a deliciously complex Jura Chardonnay from the Jura, matured in barrels sous voile (under the veil) under flor yeast for 18 months. Not quite as full-on as a true Vin Jaune, it has softer oxidised notes giving lovely, slightly salty sherry notes, along with pear, quince and plum. A great wine for bold wine explorers and sherry drinkers wanting a bit more punch to their wine. Organic, natural yeast, no fining, only very lightly filtered and minimal sulphur added.
ABOUT THE WINERY
Marie-Pierre Chevassu-Fassenet took over her family’s wine estate in 2008 and manages her 4.5 hectares from vine to cellar door herself. She uses indigenous yeast; her grapes are also harvested and destemmed by hand.
